{Recipe} Strawberry Chia Muffins

Strawberries are in season (all year round) here in Cali so when I scored a big basket of organic strawberries at the market I couldn’t wait to bake with them. These muffins are completely gluten-free, very low in sugar (absolutely zero processed sugar) and of course, dairy-free. The chia seeds add a boost of healthy fiber and good fats so you end up feeling full and satisfied after this yummy treat. Got 15 minutes? Whip these up!

Ingredients
  1. 2 cups almond meal (almond flour)
  2. 3 eggs
  3. 2 tbsp coconut oil, melted
  4. 1 tbsp lemon juice
  5. 1 tsp vanilla extract
  6. 1 cup fresh strawberries, chopped
  7. 1/4 cup maple syrup
  8. 1/2 tsp baking soda
  9. 2 tbsp chia seeds
  10. pinch pink salt
Instructions
  1. Preheat oven to 350 degrees.
  2. In a bowl, mix the wet ingredients (eggs, lemon juice,extract, maple syrup, coconut oil.
  3. In a seperate bowl, mix the dry ingredients (flour, baking soda, salt).
  4. Combine wet with dry. Fold in the strawberries.
  5. Spoon mixture into muffin tin (should be oiled or lined with paper cups).
  6. Bake for 15-18 minutes or until golden.
  7. Serve with a tsp of almond butter and honey - delicious!
